Aloha Avocado Pie
Ingredients:
- 1 can (15 1/4 Oz) Pineapple Tidbits
- 3 Eggs, separated
- 1/4 cup Water
- 1 envelope Plain Gelatin
- 1/3 cup Sugar
- 1/4 teaspoon Salt
- 1 medium Avocado
- 1 teaspoon Lime or Lemon Juice
- 3/4 cup Sour Cream
- 1 9" Crumb Pie Shell
Method:
Drain Pineapple, saving juice.
Beat together Egg Yolks, Pineapple Juice, and Water.
Mix Gelatin along with 2 teaspoons Sugar and Salt.
Combine with Egg Yolks and cook over low heat, stirring until Gelatin is dissolved.
Cool.
Sieve or mash Avocado and mix with Lime or Lemon Juice and Sour Cream.
Add to Gelatin mixture.
Chill, stirring once or twice, until mixture is partially set and mounds.
Beat Egg Whites; gradually adding remaining Sugar.
Fold Gelatin mixture and Pineapple into Egg Whites.
Turn into Crumb Crust and chill at least 4 hours.
